Akamu is another name for pap (custard), a popular Nigerian breakfast dish from maize (corn) flour or cornmeal. It's often served with milk, sugar, and other toppings. Here are some other names for pap:

  • Akamu (igbo)
  • Pap or custard (Yoruba)
  • Ogi (Hausa or Yoruba)
  • Koko (Ghana)

Pap is a staple breakfast food in many West African countries, including Nigeria, Ghana, and Cameroon. It's easy to prepare and can be flavored with various ingredients like cinnamon, nutmeg, or fruit purees.

Making powdered custard at home from scratch is a simple process that requires just a few ingredients. 

Here are the step-by-step guide to make this powdered custard "Akamu" from scratch in your comfort zone.

Steps in making the Powdered Custard From Scratch 


Ingredients Needed:


  • Corn🌽 
  • Carrot
  • Date

Instructions To Make This Powdered Custard From Scratch;


In a bowl, add your fresh corn you get from the market, wash thoroughly to remove any unwanted particles from it.



Add water to the corn and cover it and soak for the next 3 days so that it will ferment.



After 3 days, add Carrot, Dates. And then grind in a blender or better still you can take it outside for grinding.





After grinding, transfer it into your sieve cloth.



Add water, squeeze and cover it, leave to settle down.


Gently strain it when it has settled.


After straining, transfer the pap into a muslin bag or any other good sieving cloth to extract unwanted water from the pap.



Place something heavy to drain out the water.


After draining, transfer the pap on a tray, spread it out on the try to sun dry it.



Now, the pap is neatly dried, let's blend it into a powder form now.



We can see that it is well grind now.

To make custard:



1. Mix 2 to 3 tablespoons of the powdered mixture with small amount of water in a bowl.

2. Whisk until smooth and free of lumps.

3. Add your hot water, stirring constantly, until the mixture thickens and comes together in the boil.

4. Add Milk, Sugar, vanilla powder (if using).

5. Let it cool and serve.

6. Serve with your favorite protein and enjoy your homemade powdered custard!
